If you have ever wondered what is appealing about eating vegan, or if you have ever been curious about finding tasty ways to introduce more plant-based foods into your regular diet, join Clarissa Mansfield, author of the local blog “Vegan in Bellingham,” as she shares her passion for delicious food, debunks myths about veganism, and offers thoughts on both cooking and eating out.
Clarissa Mansfield is a full-time classified staff member of Wilson Library at Western Washington University. In her free time she enjoys taking pictures, writing about food, cooking, creating eco-friendly vegan products, walking on the local trails, and being a vegan in Bellingham.
